Lemon Chicken Salad Recipe

Gone are the days when salads used to be boring and unpalatable. Salads like this Lemon Chicken salad, are not only tasty but also nutritious and filling at the same time. Because of the absence of any visible carbs, this Lemon Chicken salad recipe is perfect for those who are watching their weight or even people who are following a low carb lifestyle.

Try the Lemon Chicken Salad recipe today as it’s easy to make and most of the ingredients are easily available everywhere. So get cooking!

Serves 3-4

INGREDIENTS

  • Boneless chicken breast 300-400g
  • Lemon Juice 3 Tbsp.
  • Salt 1 Tsp.
  • Red chili powder ¼ Tsp.
  • Yogurt ¼ Cup
  • Turmeric ½ Tsp.
  • Black pepper ¼ Tsp.
  • Besan 2 Tbsp.
  • Garlic 2 Tbsp.
  • Mustard Oil  1 Tsp.
  • Iceberg Lettuce Half Berg
  • Cucumbers 1
  • Tomatoes 1

For dressing

  • Olive Oil 1 Tbsp.
  • Parsley 2 Tbsp.
  • Garlic 2 Tbsp.
  • Salt 1/2 Tsp.
  • Black pepper ¼ Tsp.
  • ACV 1 Tbsp.
  • Lime Juice 1 Tbsp.

METHOD

  1. Break down the lettuce after washing nicely. Dice the tomatoes into cubes and cucumbers as well.
  2. For the chicken, marinate the chicken first with lemon juice and salt and red chili mixture. Keep it in the fridge for 20 minutes.
  3. Now, prepare a mixture for chicken marinade by mixing curd, turmeric, besan, garlic, and black pepper. Mix well and apply evenly on chicken and further marinate for 30 minutes.
  4. Cook the chicken on a stove by tossing over both sides, until fully cooked. Cut the chicken into strips and keep aside.
  5. Prepare the salad dressing by mixing olive oil, vinegar, salt, black pepper, Lime Juice, Garlic, and fresh parsley. Stir everything well and keep aside.
  6. Prepare a salad tray with all the veggies. Top it with chicken and drizzle the salad dressing. Serve fresh or store in the fridge.
